Make dressing by mixing 1/2 cup of lain unsweetened yoghurt, juice of 1/2 lemon. a small crushed garlic clove and 1/4 tsp root ginger finely grated. Mix and stand for 10 minutes before serving.
  3. Tomato and Cucumber Salad – Combine 4-6 diced tomatoes, 1 medium peeled seeded and cube, 1 small red onion and crushed clove garlic in a bowl.Mix together 1/4 cup olive oil, 2 TBSP white wine vinegar, 1/4 tsp sugar, salad and pepper. Add dressing to vegetables. Serve on a bed of rocket leaves.
  4. Kumara  and Orange Salad РCook 4 medium sized kumara until just cooked through. Cut int cubes when cool. Cut 3-4 oranges into cubes. Cut 3-4 stalks Celery. Place all in a bowl.
