More salads to savour …

I was quite surprised that one of my most popular posts was salads to savour.¬†There’s clearly something universally appealing about sharing ideas for quick, healthy nutritional meals.

So with Summer upon us in the Southern Hemisphere, I thought I’d share a few more.

  1. Tomato Salad – cut 3-4 ripe tomatoes into chunks, toss 2-3 finely chopped spring onions. Add 2 TBSP mint leaves, juice of a lemon, 1 tsp sugar, 1/2 tsp salt and a few drops of hot pepper sauce. Cover and refrigerate for 20 minutes. Turn to coat tomato with dressing and serve.
  2. Cucumbers in yoghurt – thinly slice an unpeeled cucumber, sprinkle with 1 tsp salt and leave to stand for 10 mins, rinse with cold water and drain. Make dressing by mixing 1/2 cup of lain unsweetened yoghurt, juice of 1/2 lemon. a small crushed garlic clove and 1/4 tsp root ginger finely grated. Mix and stand for 10 minutes before serving.
  3. Tomato and Cucumber Salad – Combine 4-6 diced tomatoes, 1 medium peeled seeded and cube, 1 small red onion and crushed clove garlic in a bowl.Mix together 1/4 cup olive oil, 2 TBSP white wine vinegar, 1/4 tsp sugar, salad and pepper. Add dressing to vegetables. Serve on a bed of rocket leaves.
  4. Kumara  and Orange Salad РCook 4 medium sized kumara until just cooked through. Cut int cubes when cool. Cut 3-4 oranges into cubes. Cut 3-4 stalks Celery. Place all in a bowl. To make dressing add 1/2 tsp curry powder to 1/2 cup mayonnaise if your choice. Add dressing to vegetables and mix together.
